I was feeling nostalgic for a bag full of Bignets and chickory coffee from Cafe Dumond in the French Quarter, so I made some!

You can order the mix online, or buy it locally rarely. It’s cheap, easy to make(just add water) and amazingly rewarding.

    Years ago I had a pen pal from Shreveport who first told me about beignets. I could never quite grasp what they were. lol They look delicious! I’d love to be able to try some.

    Here in New Mexico we have Sopaipillas, which is the same thing as Beignets (fried bread) just without the powdered sugar. We put honey on them here. But since I don’t like honey, I put powdered sugar on them anyway and poof! Sopaipillas turn to Beignets!
